Cannabis-Infused Simple Syrup That Actually Infuses

THC barely dissolves in sugar water, so simmering flower in syrup leaves most of it behind. Use vegetable glycerin or a measured tincture instead, and do the math.

A good cannabis simple syrup sweetens coffee, tea, lemonade and mocktails with a dose you can count by the teaspoon. The catch: simmering flower in sugar water barely works. Here's why, plus two methods that do.

Why plain sugar water falls short

LiquidDoes THC dissolve in it?
WaterBarely: about 2.8 mg per liter
AlcoholReadily
Oils and fatsReadily
GlycerinYes, and glycerin mixes with water

So simmered sugar water leaves most of the THC in the plant matter you strain out, while glycerin carries THC into a water-based syrup.

How to dose cannabis simple syrup

Divide the total THC by the teaspoons of syrup. For the glycerin method, 1.75 grams of 20% flower holds at most 350 mg; in about 2 cups (96 teaspoons) that's under 4 mg per teaspoon, and real numbers run lower. With a tincture, use the label: 100 mg in 1 1/2 cups (72 teaspoons) is about 1.4 mg per teaspoon. Shake before each use, start with one teaspoon and wait 2 hours.

Two methods that work

Glycerin method

Along with sugar and water, you need food-grade vegetable glycerin and decarbed flower (how to decarb). Warm the flower in the glycerin over very low heat for 2 to 3 hours without letting it simmer. Strain, then stir the infused glycerin into cooled syrup.

Tincture method

Make the syrup, let it cool completely, and whisk in a measured amount of THC tincture. Alcohol- and glycerin-based tinctures blend in; oil-based ones float. Our tincture guide explains the types, and you can check your store's menu for options, since selection varies by store.

Storage and labeling

Bottle the syrup, label it with the date and estimated mg per teaspoon, and refrigerate it where kids and pets can't reach. Poison control is 1-800-222-1222.

Ways to use it

Stir a measured teaspoon into coffee, iced tea or our strawberry canna-nade. Blend it into slushies, or add a counted number of teaspoons to a popsicle base and divide by the molds, as in our infused popsicles. It can also replace part of the sugar syrup in homemade marshmallows cut into equal squares.

Ingredients

  • 1 cup water
  • 1/2 cup white sugar
  • 1/2 cup light brown sugar
  • Glycerin method: 1/2 cup food-grade vegetable glycerin
  • Glycerin method: 1.75 grams cannabis flower
  • Tincture method: a THC tincture, alcohol- or glycerin-based, measured to your dose

Steps

  1. For the syrup, bring the water and both sugars to a simmer, stirring until dissolved. Cool completely.

  2. Glycerin method: decarb the flower on a lined tray in a 240°F oven for 30 to 40 minutes, then cool it and break it up.

  3. Warm the flower in the glycerin over very low heat, in a double boiler or a slow cooker on low, for 2 to 3 hours. Keep it below a simmer and stir now and then.

  4. Strain through a fine sieve lined with cheesecloth, pressing gently, and stir the infused glycerin into the cooled syrup.

  5. Tincture method: whisk the measured tincture into the cooled syrup until evenly mixed.

  6. Bottle, label with the date and estimated mg per teaspoon, and refrigerate. Shake before each use.

Frequently asked questions

How strong is homemade cannabis syrup?

As strong as your math says, at most. For glycerin syrup, multiply grams of flower by 1,000 and by the THC percentage, divide by the teaspoons of syrup, and expect less. With a tincture, the label gives the mg you add. A few mg per teaspoon keeps one spoonful modest.

How long does infused syrup last?

Plan on about a month in the fridge in a clean, sealed bottle. Shake it before each use, since the infusion can settle. Toss it if it turns cloudy, smells off or shows mold, and keep the label current with the batch date and strength.

Can I use it in hot drinks?

Yes. Stir a measured teaspoon into coffee or tea just as you would plain syrup; a warm drink doesn't change the dose. Plan on the usual edible wait of up to 2 hours before deciding on more, and keep track of how many teaspoons you've had.
