Spiced Pumpkin Bars Made with Cannabutter

A fall sheet-pan dessert for a crowd: soft spiced pumpkin bars with a cannabutter blend tuned to your target dose, under a plain cream cheese frosting.

These cannabis pumpkin bars are a fall sheet-pan dessert for a crowd: soft, cinnamon-spiced squares under cream cheese frosting. You blend cannabutter with plain butter to land on the dose you want per square.

Dosing cannabis pumpkin bars: blend the butter

Work backward from your target. For 24 squares at about 5 mg each, you need about 120 mg in all. If your cannabutter is estimated at 40 mg per tablespoon, that's 3 tablespoons, with plain butter making up the rest of the cup. Leave the frosting plain, cut exactly 24 squares, and start with half of one. Effects can arrive up to 2 hours later, so wait before having more.

Ingredients and method

Whisk the flour, baking powder, baking soda, spice and salt. In a second bowl, whisk the eggs, then the pumpkin, sugar and melted butter blend, and fold in the dry mix. Bake until a toothpick pushed into the middle comes out free of wet batter, cool completely, then spread on a frosting of cream cheese, butter, vanilla and powdered sugar. Our cannabutter recipe covers the infusion. Order flower ahead from your nearest store and join The Society, our free loyalty program, to earn points.

Storage and labeling

Refrigerate frosted bars in a container labeled "infused," with the date and mg per square. If a child or pet eats one, call poison control at 1-800-222-1222.

Party plan: bake a plain batch too

Holiday tables draw every age, so bake a second, plain pan and keep the two apart. Use separate containers, label both, and serve the infused squares yourself instead of leaving them out. Only adults 21 and older who know what they're eating should get one, and Michigan law bans driving under the influence, so plan rides home. • 1/2 teaspoon salt
  • 4 large eggs
  • 1 can (15 ounces) pumpkin puree (not pie filling)

  • 1 cup melted butter blend: cannabutter plus plain butter, per your dose math (example: 3 tablespoons cannabutter and 13 tablespoons plain butter)
  • For the frosting: 6 ounces cream cheese, softened
  • For the frosting: 1/4 cup plain unsalted butter, softened
  • For the frosting: 1 teaspoon vanilla extract
  • For the frosting: 2 cups powdered sugar

Steps

  1. Heat the oven to 350°F and grease a 10-by-15-inch rimmed baking pan.

  2. Whisk the flour, baking powder, baking soda, spice and salt in a bowl.

  3. In a large bowl, whisk the eggs, then whisk in the pumpkin, sugar and melted butter blend until smooth.

Frequently asked questions

Should the frosting be infused too?

No. Frosting gets spread unevenly, and people scrape extra on or leave some behind, which makes the dose hard to count. Keeping all the THC in the bar means every evenly cut square carries the same amount. Want stronger squares? Adjust the butter blend instead.

How long do frosted bars keep?

About 4 days in the fridge, covered and labeled. Cream cheese frosting shouldn't sit at room temperature for more than 2 hours, so bring the bars out shortly before serving and put leftovers back promptly. They cut more cleanly when cold, too.

Can I freeze them?

Yes, ideally before frosting. Wrap the cooled, cut squares tightly, label the bag with the date and dose, and freeze for up to 3 months for the best texture. Thaw overnight in the fridge, then frost. Frosted bars freeze too, though the frosting may weep a little.
