Crispy Sage Gnocchi with Cannabis Brown Butter

Store-bought gnocchi, crisp sage and brown butter, with the cannabutter stirred in at the very end over low heat, or a measured canna-oil drizzle per plate.

This cannabis gnocchi is an easy cannabis dinner that takes about 30 minutes: store-bought potato gnocchi tossed in sage brown butter and topped with crisp fried sage. The dose goes in at the finish, after the browning is done. Melt cannabutter into the sauce over low heat, or drizzle measured canna-oil on each plate.

Why the cannabutter goes in last

Browning butter takes real heat, and THC doesn't benefit from it. In lab studies of heated cannabis extracts, THC levels fell as heating ran hotter or longer, possibly through evaporation, and at the highest temperatures some turned into CBN. So the plain butter does the browning. Once it smells nutty, turn the heat to low, let the pan settle, and stir in the cannabutter just until it melts. A drizzle of canna-oil on each plate is even more exact.

Either way, divide the THC you add by the number of plates, and toss well so the sauce coats evenly. Our THC dosage guide helps you choose an amount.

What you need for cannabis gnocchi

Refrigerated or shelf-stable potato gnocchi, olive oil, a big bunch of fresh sage, plain butter, your measured cannabutter, parmesan, salt, pepper and a pinch of chili flakes. If you grow cannabis legally at home, a few dry fan leaves can fry alongside the sage for flavor. In Michigan, adults 21+ may grow up to 12 plants per household, out of public view and behind a lock. Raw leaves are mostly THCA, the non-intoxicating form explained in our THC vs. THCA guide, but frying can turn some of it into THC. Think of them as a garnish, not a dose you can count on, and tell guests they're there.

The order of operations

Start the pasta water first. While it heats, fry the sage leaves in olive oil until crisp. Boil the gnocchi until they float, brown the plain butter, lower the heat, then add the cannabutter and chopped sage. Toss in the gnocchi with parmesan, plate evenly and top with the fried leaves.

Swaps

  • Gluten-free: gluten-free gnocchi work the same way; toss them gently.
  • Canna-oil only: brown plain butter, skip the cannabutter, and drizzle measured canna-oil over each plate.
  • Crunch: toasted walnuts, hazelnuts or pine nuts.
  • Another sauce: our super green canna pesto makes a quick, herby finish.

Storage and labeling

Eat the gnocchi right out of the pan, since they turn dense as they sit. Refrigerate any leftovers within two hours in a container labeled with the dose and date, and finish them within 3 to 4 days. Keep infused food away from children and pets, and if someone eats it by accident, call Poison Control at 1-800-222-1222.

21+ only. Please consume responsibly.

Ingredients

  • 1 pound refrigerated or shelf-stable potato gnocchi
  • 3 tablespoons olive oil
  • 20 to 24 fresh sage leaves, plus 1 tablespoon chopped sage
  • 3 tablespoons plain unsalted butter
  • Cannabutter, measured for 4 servings (see the dosing note)
  • 1/2 cup finely grated parmesan
  • Salt, black pepper and a pinch of chili flakes
  • Optional: a few dry fan leaves from a legal home grow

Steps

  1. Bring a large pot of generously salted water to a boil.

  2. Heat the oil in a wide pan set over medium-high. Fry the whole sage leaves, and any fan leaves, in small batches for 20 to 30 seconds until crisp. Drain on paper towels and pour off all but a thin film of oil.

  3. Drop the gnocchi into the boiling water and cook until they bob to the surface, 2 to 3 minutes. Scoop them out, saving 1/2 cup of the water.

  4. Add the plain butter to the pan over medium heat and swirl until it foams, turns golden brown and smells nutty, 2 to 3 minutes.

  5. Turn the heat to low and wait 30 seconds. Stir in the cannabutter and chopped sage just until melted.

  6. Add the gnocchi and parmesan and toss until glossy, loosening with splashes of the saved water. Season, divide evenly among 4 plates and crown with the fried sage.

Frequently asked questions

Do fresh cannabis leaves get you high?

Not the way flower does. In one lab profile, leaves held about 1 to 2% cannabinoids against roughly 16 to 20% in flowers. Raw plant material is also mostly THCA, and how much of it a quick fry turns into THC is hard to predict. So a few fried leaves are a garnish that may add a small, variable amount of THC. Tell guests they're there.

Can I use canna-oil instead?

Yes, and it's the most precise option. Make the dish with plain butter only, plate it, then drizzle a measured amount of canna-oil over each serving. Everyone gets the same dose, and anyone who'd like a plain plate simply skips the drizzle. A fruity olive oil infusion suits sage and parmesan.

Can I make the gnocchi from scratch?

Absolutely. Bake russet potatoes, rice them while hot, then work in flour, an egg and salt just until a soft dough forms. Roll it into ropes, cut 1-inch pieces and boil them until they float. Homemade gnocchi are plain, so the dosing steps stay exactly the same.
