Peanut Butter Cheesecake Bars with a Cannabis Chocolate Drizzle

Salty-sweet bars on a peanut butter cookie crust, with a creamy cheesecake layer, pretzels and a canna-chocolate drizzle that splits evenly nine ways.

These cannabis cheesecake bars start with a shortcut: refrigerated peanut butter cookie dough as the crust. A tangy cheesecake layer, pretzels and chocolate chips go on top, and the infusion lives in one place, a canna-coconut oil chocolate drizzle.

Dosing cannabis cheesecake bars: one drizzle, nine bars

Divide the THC in your canna-coconut oil by nine. With oil at about 36 mg per tablespoon, 1 tablespoon gives roughly 4 mg per bar at most. Score a 3-by-3 grid before you drizzle, pipe the same zigzag onto every square, and empty the bag. Have half a bar first and wait 2 hours; our THC dosage guide explains starting amounts.

Ingredients and method

Press the cookie dough into a lined 8-inch pan and bake it briefly to set. Beat cream cheese with sugar, an egg, vanilla and salt until smooth, spread it over the crust, and scatter pretzel pieces and chocolate chips on top. Bake until the center barely wobbles, then cool, chill and pipe on the infused chocolate. Our canna oil guide shows how to infuse oil, coconut included, and you can order flower ahead for pickup from your local store.

Storage and labeling

Keep the bars in the fridge, in a container labeled "infused" with the date and mg per bar, apart from plain desserts. Eat them within about 4 days. Poison control is 1-800-222-1222.

Variations

Swap in another cookie dough, go gluten-free with gluten-free dough, pretzels and chocolate chips, or double the pretzels for crunch. For more easy edible dessert ideas, try our pot brownies or no-bake oatmeal cookies.

Ingredients

  • 1 package (about 16 ounces) refrigerated peanut butter cookie dough
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup pretzel pieces, lightly crushed
  • 1/3 cup chocolate chips, for the top
  • 1/3 cup chocolate chips, for the drizzle
  • 1 tablespoon canna-coconut oil (or the amount your dose math calls for)

Steps

  1. Heat the oven to 350°F and line an 8-inch square pan with parchment, leaving an overhang.

  2. Press the cookie dough evenly into the pan and bake for 10 to 12 minutes, until puffed and set at the edges.

  3. Beat the cream cheese and sugar until smooth, then beat in the egg, vanilla and salt.

  4. Spread the cheesecake layer over the warm crust and scatter the pretzels and 1/3 cup chocolate chips on top.

  5. Bake 20 to 25 minutes, until the center is set with a slight wobble. Cool for 1 hour, then refrigerate for at least 2 hours.

  6. Lift the slab out and lightly score a 3-by-3 grid with a knife.

  7. Melt the remaining chocolate chips with the canna-coconut oil over gentle heat, stirring until smooth. Spoon into a zip-top bag and snip a small corner.

  8. Pipe the same zigzag over each square until the bag is empty. Chill until the chocolate sets, then cut along the scored lines into 9 bars.

Frequently asked questions

How do I infuse chocolate with canna-oil?

Melt chopped chocolate or chips with a measured amount of canna-coconut oil in a bowl set over barely simmering water, or in the microwave in short bursts at half power. Stir until completely smooth so the oil is evenly mixed. The oil also thins the chocolate, which makes it easier to pipe.

Can I use a different cookie dough?

Yes. Sugar cookie, chocolate chip or oatmeal dough all make a good crust; peanut butter just suits the salty-sweet theme. Bake times can shift by a few minutes, so look for a set, lightly golden edge before you add the cheesecake layer.

Do cheesecake bars need refrigeration?

Yes. The filling is made with egg and cream cheese, so keep the bars in the fridge and don't leave them at room temperature for more than 2 hours, serving time included. Chilling also firms them up, so they slice cleanly.
